Rasmus enjoys being the boss of his own kitchen.
Chef Rasmus Lodahl from Restaurant Ø on the island of Rømø won the 2019 edition of Local Cooking Sønderjylland with a dish based on local ingredients.
It was a dream come true when 29-yearold Rasmus Lodahl took up the position of head chef at Restaurant Ø on Rømø in January 2018.
Ever since he began training as a chef and later became sous-chef at Schackenborg Slotskro in Møgeltønder, he’d dreamt of one day becoming head chef at a good restaurant, and now his dream was realised.
Since taking up the position, Rasmus has had the chance to use all his acquired skills, as the tasks at Restaurant Ø are wide-ranging. The restaurant is located at the holiday resort Enjoy Resorts, where Rasmus is responsible for buffets, brunch and fine cuisine.
With regard to the latter, Rasmus has developed a six-course tasting menu, which is served almost all year round and where using as many local ingredients as possible when creating top-class gourmet dishes is a guiding principle.
It was one of the dishes from the tasting menu that earned Rasmus the greatest praise in his career as a chef to date, when last summer he won the annual Local Cooking Sønderjylland cooking competition for the second time. Rasmus also won the competition in 2017.
Some of the best chefs in Sønderjylland compete against each other, and Rasmus’ winning dish consisted of whelks braised in apples with new potatoes, fried kale, beurre blanc with oysters and herbs from the local marsh.
Away from work, Rasmus lives in Møgeltønder with his partner and doesn’t cook much at home. Although he has a declared ambition to become an even better chef, he doesn’t have any firm goals as to what the future may bring.
Restaurant Ø at Enjoy Resorts is open all year round except for a three-week period in January.
